RED BELL PEPPER SAUCE
servings: 2 – 4
3 red peppers, diced
1 onion, halved and sliced
4 garlic cloves, minced
2 tbsp olive oil
salt, to taste
black pepper, to taste
Heat the oil in a skillet, over medium heat, add onion and cook for 5 – 7 minutes or until soften.
Add garlic and cook for 1 minute, add peppers, season with salt and black and cook for 10 –12 minutes or until soften. Remove from the heat and let it cool for 15 minutes.
Transfer the peppers mixture to a blender and process until smooth. Add a splash of water if needed to get a better result.
Return the sauce to the skillet, cook over medium heat for couple of minutes.
