Garden Barley



servings: 2 – 4


1 cup pearled barley

1 onion, diced

2 garlic cloves, minced

2 cups leek, halved and finely sliced

2 carrots, grated

1 small zucchini, diced

2 tbsp olive oil

salt, to taste

black pepper, to taste

sweet paprika, to taste



  1. Cook barley according to the package instructions.
  2. In a medium saucepan, heat the olive oil, add onion and cook until soften.
  3. Add garlic and sweet paprika, cook for 30 seconds, stirring constantly.
  4. Add leeks, carrots add zucchini. Season with salt and black pepper. Cook until vegetables soften.
  5. Add barley to the vegetables, season with salt and black pepper and mix to combine.
