100 g desiccated coconut
100 g sugar
2 tsp baking powder
350 g unsalted butter, room temperature
powdered sugar, optional
Working with your hands, combine all of the ingredients into smooth dough and form a ball.
Cover the dough with a plastic wrap and place into refrigerator for an hour.
In the meanwhile, line a baking tray with baking paper. Preheat the oven to 180°C.
Take roughly one tbsp of dough, shape it into a ball, roll it and shape into letter “U”. Place it on a baking tray. Repeat with the remaining dough.
Bake for 10 – 12 minutes or until baked through.
