Coconut Cookies




300 g all-purpose flour

100 g desiccated coconut

100 g sugar

2 tsp baking powder

2 eggs

350 g unsalted butter, room temperature

powdered sugar, optional



  1. Working with your hands, combine all of the ingredients into smooth dough and form a ball.
  2. Cover the dough with a plastic wrap and place into refrigerator for an hour.
  3. In the meanwhile, line a baking tray with baking paper. Preheat the oven to 180°C.
  4. Take roughly one tbsp of dough, shape it into a ball, roll it and shape into letter “U”. Place it on a baking tray. Repeat with the remaining dough.
  5. Bake for 10 – 12 minutes or until baked through.
  6. (optional) When cookies cool down a bit, sprinkle with powdered sugar.


Entertaining tips:

  • These are my go-to cookies to have on hand during Christmas holidays. They are simple and delicious. I keep them in air-tight container in refrigerator and pull them out  30 minutes before serving, to warm them to room temperature.
  • In my experience, young children love Coconut cookies, so they are perfect for kids’ parties. They are easy to hold in heads and don’t make a lot of crumbs.
  • In my opinion, Coconut Cookies are very elegant because of their shape and are perfect to serve when hosting a tea party.
