Cajun Chicken Veggie Rice



servings: 2 – 4


1 cup brown rice

1 onion, diced

1 red capsicum, diced

1 broccoli head, cut into florets

2 carrots, grated

2 tomatoes, diced

2 cups cooked chicken, cubed or shredded

3/4 cup water

salt, to taste

black pepper, to taste

Cajun seasoning, to taste

2 tbsp sunflower oil

1 tsp brown sugar



  1. Cook rice as usual.
  2. Heat the oil, in a big skillet, add onions and cook for 2 – 3 minutes. Add tomatoes, sprinkle with sugar and cook until soften. Add the rest of the vegetables, water and season with salt, black pepper and Cajun. Cook until water evaporates and vegetables are soft.
  3. Add cooked chicken and rice, mix to combine and cook for a few minutes or until chicken is heated through.

  • This dish is made for your next last-minute party! Grab a rotisserie chicken and a selection of vegetables from a supermarket, cook rice and delicious dinner can be served to your guests. You will even have time to make a soup or appetizer (or both!)
  • Cajun Chicken Veggie Rice is also perfect to serve at buffet or food station because it is easy to make and can feed a large group of people. Keep it in a food warmer.
